What's real leather, what ain't?

Hi folks!

 

Well, my King Ranch leather treatment, as recommended in owner's manual, arrived this week. I ordered it from the King Ranch store. Anyhow, I am about to treat the leather for the first time before the really cold weather sets in. So, it looks to me like the front and rear seating surfaces and the console lid are saddle leather, but what about the steering wheel cover, arm rests, head rests, dash boards?

 

I have heard great reviews about the King Ranch leather treatment, but have also read that everything from saddle soap to stuff off the shelf at Wal-Mart works too. Any advice?
